Today is the orange-scented carrot cake recipe.

I put orange zest on the carrot cake sheet.
So every time I chew it I can feel the orange scent gently, and the taste and scent have improved.
I made orange caramel adding orange zest and orange juice and applied it between the carrot cake sheets.
and also made cream cheese buttercream frosting.
you will find that the carrot cake sheet and orange go well together.

This cake is an ordinary carrot cake if you omit orange zest.
However, since caramel is sanded on this cake, there is a risk of a little higher sugar content.
So I reduced some sugar for the cake batter.
If you want to make it without caramel, just add 5-10 grams of sugar.

If you chop the carrots thickly or chop them like baby food, the sheets break well.
And don’t grind. If you do, it gets watery.
As shown in the video, finely shred carrot using a 2~3mm fine grater.
Put the walnuts in a blender and pulse several times.
It’s good to grind 80% very finely and 15~20% to make you can chew.
If the walnut chunks are too large, the sheet breaks again.

The sheet is more than 6cm tall. So, you will get 4 cake sheets 1.5cm thick.

I prepared a zest for two oranges. The amount of zest is different for each orange
I got about 13g. So I put 8g in carrot sheet dough and 5g in caramel.

The caramel was made thinner than regular caramel to make it not too sweet when I apply between cake sheets.
So, after making the caramel, it’s good to refrigerate it for several hours to keep it solid.

Later.. later.., I thought it would be better to sift it through a sieve as soon as I boiled the caramel. I didn’t but, you strain the caramel.๐Ÿ˜…

Cream cheese, butter, and condensed milk are all room temperature.
If your cream cheese buttercream too stiff, heat it in the microwave for about 5 seconds.
Conversely, if the cream is too thin, put it in the refrigerator and then cream again when it is cold.
This buttercream also lowered the sugar content a little.
